Guiness-braised Corned Beef
Or as I like to refer to it…ultimate Irish Stew. Potatoes Carrots Celery Cabbage Corned Beef Brisket (mine’s the tip cut, around 3 lbs) Corning/Pickling Spice 1 can of Guiness Enough beef stock to cover This is really difficult recipe.  I mean, you have to pay attention.  First thing you do is put everything in a crock pot, set it to “Low”, dump in the liquids, put...

Grilled Stuffed Pork Tenderloin
Grilled two of my signature tenderloins yesterday, and while they tasted great, I still have a bit of work to do. First, the logistics of the dish: 2 nice, Carlton Farms pork tenderloins, butterflied. 1/2 c. of Gorgonzola crumbles 2 c. of Spinach (fresh) Olive Oil Balsamic Vinegar Salt, to taste Pepper, to taste Basically, i just butterflied the cuts, mixed up some Balsamic and Olive Oil,...

Quasi-review...Thai Spoon, Hawthorne
MattO and I got some take-out from Thai Spoon last night.  Pretty barebones, but mad tasty and mad simple food.  MattO rocked some fiery Pad Kee Mao, I got some spicy yakisobe (I know, not really Thai) but it was hot.  Tofu is good - not like Chaba or Pad Thai Kitchen where there’s a good crust, but solid nonetheless.  Noodles and sauce were tasty, but man, the only veggies in my stir fry...

Build Your Own Smoker! →
nullisnotzero: This is a pretty good description of how to smoke on a grill. Normally though, I put briquettes on either side of the kettle, a pan underneath, and put the ribs in the center. It promotes even circulation. Not to mention, I leave the vents open to promote the coals to cool down quicker, prompting me to add more chips and tend to the grill a bit more… Yeah, and drink like...

ClarkLewis
Last week I had the pleasure of eating at Clarklewis with Missy for her going-away dinner (and a reason to finally get to a fine-dining venue in this city). Let’s just say that…even though the place has new ownership and has taken some hits since it’s heyday of 2006…this place was fucking amazing. The appetizers, the pasta, and our main courses (Pork Shoulder with cracked...

Mindblowing Rib Rub
So we had a nice little bbq for Memorial Day, and all the food served was prepped on the grill.  This is the rub recipe that I put on the spare ribs.  Smoke spare ribs (or baby backs if that’s your fancy) for 2-3 hours over mesquite chips, or until the meet pulls about 1/4 inch from the bone… 1/2 c. of brown sugar 3 Tbsp Paprika 1 Tbsp. Coarse Sea Salt 1/2 Tbsp. Black Pepper 3 Bay...

Marinated Stuffed Grilled Pork Tenderloin
Whoah, what a mouthful that title was…regardless, this was delicious, and the whole meal was made for under $20… 2 Pork Tenderloins, medium size (on sale for like $6 at Safeway!) 1 bunch of fresh spinach (cleaned) 3 cloves garlic (smashed, pressed, whatever) 1/4 of a red onion, diced Marinade:   1/2 c. olive oil 2-3 Tbsp. Balsamic Vinegar  Butterfly both tenderloins, generously salting...

Garlic Pepper Citrus Marinade (for Pork?)
I bought a humongous pork tenderloin about 2 months ago and froze it.  Since the weather is going to be nice this weekend, I thought maybe i’d pull it out and grill it up. The marinade I partially stole and made my own: Lime Juice Orange Juice Chopped garlic Olive Oil Salt Pepper Red Bell Pepper Bay Leaves  I haven’t decided if I’ll smoke this (and what type of wood to use), but...

Restaurants to Try in PDX...
A co-worker gave me all these choice coupons for local restaurants: Equinox:  www.equinoxrestaurantpdx.com - I like the weird combos this place has going.  A bit heavy on the Italian-style dishes, but hey, who doesn’t like italian food? 23Hoyt:  http://www.23hoyt.com/ - what a pretentious fucking name.  A bit steep, but go figure, it’s NW 23rd… D.F. :  www.dfpearl.com - Looks...

Buttermilk Fascinations
I’m getting sick and fucking tired of hearing about how everything needs to be braised/steamed/marinated in fucking buttermilk.  Seriously people, buttermilk is pretty awesome, but I don’t feel like it does anything to meat besides adding a snippet of body to the flavor. Case and point:  I ate at Lovely Hula Hands on Mississippi last weekend, and it was pretty decent.  I had this pork...

Modified Portuguese Kale and Sausage Soup
I’ve made this before and it turned out stellar, but here’s the modified version that I tried last night: 2 cartons low-salt chicken stock 2 cups water 1 medium onion 2 cloves garlic 3 yellow potatoes 1 small head cauliflower 1 bunch Kale (whatever species you want) 2 9 inch sticks of smoked Andouille 2 Tbsp. Cajun seasoning Sautee onion and garlic in about a Tbsp. Olive Oil in a...
